Garden Turkey Loaf


Prep Time: 10 minutes
Cook Time: 60 minutes

Makes 8 servings

1 1/2 pounds ground turkey breast
One 10-ounce package frozen chopped spinach, thawed and drained
1 cup Quaker Oats (quick or old fashioned, uncooked)
1/2 cup finely chopped onion
1/2 cup shredded carrots
2 egg whites or 1 egg, lightly beaten
1/3 cup skim milk
1 1/2 teaspoons Italian seasoning
1 teaspoon salt (optional)
1/4 teaspoon black pepper

Heat oven to 350°F. In bowl, combine all ingredients. Mix lightly but thoroughly. Shape mixture into 9 x 5-inch loaf in baking pan.

Bake 1 hour or until thermometer registers 170°F and center is no longer pink. Let stand 5 minutes before slicing.
